200g cooked Lovegrass Teff Penne
10 cherry tomatoes, halved
10 mini mozzarella balls
70g sun dried tomatoes (approximately a small handful)
10 basil leaves, torn roughly
2 tbsp good quality olive oil
Squeeze of lemon juice
Salt & pepper to taste
1. Boil and drain Lovegrass Teff penne according to pack instructions.
2. Toss all ingredients together, season to taste.
