If you’re looking for an easy recipe to add more Habesha teff to your diet, this one is for you! These tortillas are very quick and super easy to make, kids love getting involved in making and eating them. The dough can be flavoured with herbs and spices to add interest.

Ingredients

125g Lovegrass teff flour (both white or brown work equally well in this recipe)

20g potato starch or corn flour

pinch of sea salt

60ml water

1 tbsp olive oil

Method

Step 01

Combine teff flour, potato starch and salt.

Step 02

Add water and olive oil. Combine until it becomes a ball of dough.

Divide into 8 pieces.

Step 04

Roll each into a ball and flatten with your fingers or a rolling pin into approximately 10cm circles.

Heat a pan over high heat.

Cook each tortilla for 3-5 min on each side, or until cooked through and golden.

Serve immediately topped with salsa and guacamole.
